As an ethical vegan, I have maintained my moral standing to not eat animals or their secretions every day since my original overnight transition in May 2016.
Eventually I realized that I was also making a health-conscious lifestyle transition that would ultimately give me more energy, less inflammation, greater clarity of mind, and less anxiety, while setting me on a trajectory away from chronic dis-ease.
In the beginning it was difficult; I lost a lot of weight, I had no idea what to eat, and I struggled with how to relate to my meat-eating friends and family.
Along the way I learned new recipes, tricks of the trade, and techniques that I can share with you to make your transition more efficient and effective in meeting your goals for yourself and your family!
What we choose to put on our plates three times a day, seven days a week, is a consistent declaration of what kind of world we want to live in, how we want to feel in our bodies, and what we believe to be true about the nature of God.
